Head Chef – Contemporary Live Fire Restaurant Senior Sous Chef – Fine Dining Restaurant The Palac Kota (https://www.palackota.com/) is a new, unique place on the map of Katowice, Poland, which will soon open its doors to residents and tourists. It is a space where gastronomy, culture, entertainment and community come together to create an unforgettable experience. Due to its dynamic growth, we are looking for talented, experienced and committed people to lead the outlets at the Palac Kota venture. Job overview: We seek experienced and creative Head Chef and Senior Sous Chef to join our dynamic team at two distinct restaurant concepts: Contemporary Live Fire Restaurant, a quality-driven, grill-focused outlet and our Fine Dining Outlet, a multi concept, high quality contemporary restaurant. Key Responsibilities: • Team Leadership & Organization: Manage, train, and organize kitchen staff to ensure smooth kitchen operations. • Menu Development: Collaborate with the Executive Chef and Sous Chef to create new menu items and maintain high culinary standards. • Quality & Cost Control: Ensure food quality, hygiene, and cost management in line with property goals. • Interdepartmental Collaboration: Work closely with service managers and other departments (Sales, Marketing, F&B, Accounting) to achieve operational success. • Service Presence: Be present during service and lead by example in maintaining a high level of kitchen performance. • Administrative Duties: Handle kitchen-related office work, including managing recipe books, spreadsheets, and other organizational tasks. Qualifications: • Contemporary Live Fire Restaurant: Minimum 8 years of experience in high-quality kitchens (Michelin star is a plus), with expertise in open-fire cooking and butchery. • Fine Dining : Minimum 8 years of experience with a minimum of 2 years in a Sous-chef or head chef position at a Michelin starred level. • Experience in multi-concept restaurants or hotels, and international experience are added advantages. • Proven ability to stay calm and organized in a high-pressure environment. • Autonomous, with strong leadership and organizational skills. • Proficient level in English is mandatory Patio Head Chef Specifics: • Specialize in fresh, high-quality ingredients with an ememphasising cooking (grill, barbecue) and meat preparation. • Michelin star experience is a plus. • Strong butchery knowledge and experience in meat-oriented restaurants are highly desirable.
